		<description>I think you answered your own question as to why the shortbread comes out better when made by hand.  You stated in above that &#039;When you canâ€™t feel the grains of the sugar anymore...&#039; you would not get this with a mixer since heat transfer would be minimal when mixing.  Your body heat also effectively melts the butter and allows the liquid to mix more thoroughly with the super fine sugar.  Just a guess really but an educated one.  Loved the recipes!
