Christmas Day is a simple affair in my family. We do a nice feast on Christmas Eve, and we open gifts on Christmas morning, but after that, it’s curling up with movies and mugs and appetizers for the rest of the day and into the evening.
So, as always during this week of the year, I’m seeking out good recipes for little bites.
In case you are, too, this recipe for Lomi Lomi, a Hawaiian smoked-salmon salad, is fab on crackers.
And I’m here to tell you, my friends, that The Pioneer Woman has once again rocked my world with her insanely rich bacon appetizers. Made a test batch of these the other night, and HOLY MOLY are they tasty.
. . . And Michael Chiarello’s crispy sausage-stuffed olives are calling softly to me as well. But I kind of fear the idea of stuffing, breading, and frying olive after olive after olive.

empanadas!
you can get the dough already made at most grocery stores. the ones my puerto rican family makes are filled with a spicy ground beef mixture & small chunks of potato & whatever else the fam feels like putting in there but truly you could put whatever you wanted in- leftover christmas ham perhaps?

we set up a little buffet on christmas morning before we start the present opening and nibble on it all day:
* leftover xmas cookies/pastries (apple turnovers are my favorite)
* stuffed french toast (or french toast sandwiches w/ maple syrup for dipping)
* cheddar biscuits
* soup/chili
* olives
* carrots & edamame
* meatball/cheese plate
* tamales
* orange-cranberry relish
* goat cheese dip/hummus w/ crostada
* sparkling apple cider
* candy canes
* trader joe’s chocolate truffles
…and whatever little delectables have been given to us by relatives & friends this year. but oh, how i wish i could make a batch of meaty treats! they sound scrumptious, but it wouldn’t be very fair to sven. :)

I now have a new fav appetizer. They are Cranberry Brie Appetizer Bites. You use mini muffin tins, wanton wrappers, non-stick cooking spray, 3/4 c whole berry cranberry sauce, 1 teaspoon lemon juice, 1/2 teaspoon lemon peel, one 8 oz brie cut into 24 cubes. spray the muffin tins cups, put one wanton wrapper in each cup. Bake on 350 for 12 -14 minutes (these brown quickly, so watch!). While they are baking cook the cranberry sauce 4 – 6 minutes, stirring occasionally until hot. Remove from heat, stir in lemon juice & peel. Place one cube of brie in the warm wanton, put back in the oven for 3 – 5 minutes longer until the cheese is soft. Remove from oven and top with about 1 teaspoon of cranberry mixture. Delish!
