Favorite Recipe: Peanut Butter Chocolate Oatmeal Cookies

K. and I were sufficiently wore out yesterday that we declared a Friday Afternoon Moratorium on all work, and I got down to baking us some cookies.

This is an awesome low-sugar recipe that even our sugar-eating friends seem to like. It originally came from the Splenda website, and has been through some mods by us. Hope you like!

Peanut Butter Chocolate Oatmeal Cookies

Ingredients:

3/4 cup all-purpose unbleached flour
1/4 cup Dutch-process cocoa powder
1 cup rolled oats
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp salt

Mix all of these together in a bowl.

Then cream together:

1 stick unsalted butter (unsalted is very important)
1/2 cup creamy peanut butter
3/4 cup Splenda
1/4 cup brown sugar

Then beat in:

1 egg
1 1/2 tsp. vanilla

Chop up two bars of sugar-free chocolate. I use this kind, dark chocolate, in the 80 gram size. I should point out that, in my local market anyway, these bad-boys are three bucks apiece. Making this a special occasion cookie, to be sure.

Anyway, stir the chocolate into the batter. Drop it by tablespoonfuls onto an ungreased cookie sheet, and bake at 375 degrees for 10-11 minutes.

Be sure and sit down with a cup of tea and some warm-from-the-oven cookies, and watch a fat little squirrel load up on free food from the bird-feeder on your deck. Revel in the fact of Friday Afternoon . . . especially given the other fact, which is that you’ll be working all weekend. Mmmmmmmmmmm . . . cookies.
