DIY Granola!

I thought I’d share a little DIY project K’s been into lately: making homemade granola! Turns out, it’s way easy, way flexible, and way tasty.

We’re loving this stuff because we like cereal in the morning, but since we can’t eat refined sugar, most commercial brands are too sweet. We hacked some recipes to develop a version that’s loaded with nuts for protein, and low in sweeteners.

If you want to explore some recipes, my favorites are here, here, and here. But you can pretty much make it up as you go along. Basically, you mix up some oats and nuts, cinnamon, and maybe some flaked coconut, and then separately mix up the wet ingredients, which are also sweeteners.

You can adjust proportions quite a bit – K always reduces the liquid sweeteners to a single half-cup when he makes it, and adds more unsweetened applesauce. He just combines some molasses, honey, and agave nectar until the cup measure is full.

The key is to keep the ratio of wet ingredients and dry balanced, so that when you stir them together, you have a damp mixture that forms clumps, like this:

Then you bake the mix in a slow oven for a while, stirring periodically. This gently removes the moisture and leaves you with crunchy, slightly chewy cereal. And fills your house with amazing fragrance. After it cools, you can throw in your favorite dried fruits and store it in something airtight.

It’s delicious! And good for you. And fun.

…But apparently not as fun as napping in a sunny window.

    You can also add bits of candied ginger if you like it.

    Also, flax seeds. I don't tend to measure when I make granola.
  • wish i could remember where i got this recipe from, but here's how i make granola:

    2 c oatmeal
    1/2 c chopped nuts
    1/3 c raisins or craisins or both
    1/4 tsp cinnamon
    1/8 tsp salt

    1/3 c honey or maple syrup
    1 tsp vanilla
    2 T oil (i use olive cause that's what i have)

    mix it on up and bake on a cookie sheet 350 for 20 minutes. i stir it occasionally so it gets equally brown. it doesn't clump but it sure is tasty. you can add coconut and whatever else you like too.
  • That's great that you made your own granola. It's not something I'm up for attempting anytime soon. When I was still working for the bakery, we would bake up to 50 industrial size trays a day, which had to broken up by hand and packaged into 1lb. bags. I still haven't gotten over it, haha. I think it'll be a long while before I make granola in my own house!!!

    Oh, and P.S. Pushkin is RIDICULOUSLY cute in that last photo.

    I think I'll have to try some of this when I get bored with my current porridge phase - we are heading into winter down here in Oz so a hot breakfast is good.

    I usually make muesli in the summer and soak it in apple juice overnight. Totally different texture to granola but I would guess still reasonably low sugar as the only sweetness comes from the dried fruit and apple juice.

    I haven't tried using applesauce - thanks for the tip! I've been making granola for the last few months, trying for something nutty and crunchy with "clusters" but very low sugar. So far my formula for the wet mixture is about 1/3 c maple syrup + 1/2 peanut butter, to about 5 cups of rolled oats. That keeps the sugar where I want it, but leaves it not quite clumpy enough. I'm hoping applesauce will be the magic missing ingredient!
  • YAY! The granola process appears! I'm telling you, I crave my mom's homemade granola to this day. For the longest time, I didn't even realize you could just buy granola - I thought you just made it. You do if you want something super yummy! ;)

    I love seeing the methods for using non-sugar sweeteners. Very nice. Makes me crazy kinds of hungry.
